Nose: The bouquet is elegant and aromatic, with a harmonious blend of red fruits and floral notes. Aromas of ripe strawberries, cherries, and raspberries mingle with hints of watermelon and rose petals. Subtle herbal undertones of thyme and sage add complexity, while a touch of citrus zest provides a refreshing lift.

Production notes

Saigner, pronounced - sown - knee (my interpretation, not Webster's), which means to bleed in French. When we bring in our red grapes, sometimes we'll "bleed" or drain some of the clear juice to intensify the remaining red wine. There is some color that comes from the skins during the production process, so that's where the slight pink comes from. We then ferment the clear juice as a white wine, very cold and slow.
